Fish Tacos



Fish Tacos are not something I'm usually temped to order in a restaurant. Mexican is one of my favorites and there are just so many other items on the menu making my mouth water. However its one of my husband's favorites. I was a little nervous making them for the first time because the only time I have ever tasted them was while taking a quick bite of his. His taste buds approved so I'll share the recipe with you. We used Tilapia, but any fish would work, so you girls(you know who you are:) with freezers stuffed full of all kinds of fresh fish can try this with any variety.


Fish

4 pieces of Tilapia
lime zest and juice from one lime
Cayenne pepper
Salt and pepper
Olive oil


Lightly rub both sides of fish with olive oil, season with salt, pepper, and as much or as little cayenne pepper as you please. Sprinkle lime zest evenly over fish, then grill for 5 Min's on each side or until fish flakes with a fork. Squeeze lime juice all over fish. If you don't want to try the fish tacos, the fish is great just like this, top with salsa and serve with rice.




Salsa
1 C. tomatoes
1/4 C. onion
1 jalapeno peeper chopped
1 avocado mashed or chopped
Lime juice from half a lime
fresh Parsley or Cilantro chopped
1 Clove garlic copped
Salt and pepper
Stir together in a bowl

To assemble the tacos just break fish into large chunks, and place in tortilla. Then add salsa, your favorite cheese ( I used Monterrey Jack) And a dollop of sour cream.

Its so nice to live with someone who likes different foods then you are used to. When I got married I didn't like half the foods I can't live without now. Be adventurous, try new things!

  2. I made this this week. And yes, I even ate a little bit of the fish!! Jason really like it!! For me, the fish was okay when it was smothered by the salsa and salad I made, which of course I could not taste it! Love your stuff, you are so creative with this blogging thing! Please keep it up!
